This flourless pancake recipe is ridiculously simple—and perfect for anyone who is gluten free! If you have tried making flourless pancakes before using bananas, but they never turned out, this recipe is truly magic. It only uses 3 ingredients, but combined they make perfect pancakes every time!
Ingredients:
- 1 banana
- 1 egg
- 1/4 cup oatmeal
Optional:
- Sprinkle of cinnamon
- 1/2 tsp vanilla extract
Instructions:
- Combine everything in a blender or food processor.
2. Keep in mind, the batter consistency will vary slightly based on the size of egg and banana used. This recipe works best when the batter is slightly thin, otherwise the pancake may not cook through all the way and becomes difficult to flip. For thinner batter, you can add water. For thicker batter, you can add a little more oatmeal.
3. Cook in a skillet with butter or oil, the same way you would with traditional pancakes.
4. And that’s it! Top with peanut butter and maple syrup, or cream cheese with lots of fresh berries 🙂 Enjoy!
Creating space for simplicity
You may have noticed these photos aren’t spectacular, or shot in the expected style of most blog images (ie perfect). But a simple recipe calls for simple photography.
There’s a lot of pressure to make everything look perfect online, which can stunt the creative process or even affect mental health if we continually limit ourselves by the constant fear of imperfection. Society loves anything “aesthetically pleasing” and I’m all for making things look professional and pretty, but don’t want outward appearances to get in the way of creativity or the inner joy found in creating.
It’s good to do our best and I strive to make quality content, but desire for this brand to be relatable above all else. To encourage anyone reading and show that if I can do it, so can you! You don’t need a whole team of professionals or the best equipment to make something well received and worthwhile. You just need to put in your best effort, be true to yourself and create with a genuine heart.
Most people don’t relate to perfectly styled images with ideal lighting and edited food that’s cold by the time you actually eat it after—if at all. (Full Disclosure: no pancakes went cold in the making of this recipe!) A more relaxed and honest approach means creating from a place of ease and rest rather than striving and stress. What we need in this world, especially in the over saturated digital realm, is honesty and authenticity.
So that means the bananas in the photos have brown spots that easily could’ve been edited out, and there are crumbs on the counter, and the stove is a little (okay a lot) dirty because I can’t remember the last time I cleaned it.
But that’s real life.
I think people crave that over perfect looking yet unrealistic ideals we can never live up to, whether we realize the impact or not. It’s more important to have fun with the process and enjoy making something new, simply because we can.
Taking photos for this post started out with a sense of dread, just wanting to eat breakfast and not have it turn into a huge ordeal. So instead of feeling bogged down by capturing the perfect image, I changed the perspective of what these photos should actually capture.
Just make pancakes as you normally would and snap a few photos of simple morning moments, in a style similar to what a friend or relative might send… imperfect, unfiltered, relatable.
There’s no need to overthink the simple things in life, instead we can focus simply on what brings joy and encouragement—even if it is through making pancakes 🙂
