This crumble recipe is the perfect summertime treat! It uses a simple oat based topping that’s gluten free and low carb, making it the perfect dessert for anyone trying to avoid wheat, as well as carb conscious individuals.
This recipe is adapted from Keto Cooking Christian, and is by far one of the best gluten free desserts I’ve come across. The version made here uses peaches in addition to berries, grain free granola instead of chopped pecans, plus vanilla extract, and additional spices. Ingredients:
- 3 tbsp monkfruit
- 1/4 tsp xantham gum
- 3 cups fresh fruit (I used peaches, strawberries, and blueberries)
- 1 lemon
- 1/4 c butter
- 1/4 c Swerve brown sweetener
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 1/2 c oats
- 1/2 c almond flour
- 1/3 c grain free granola (or chopped nuts)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Sprinkle of cardamom
- Small pinch of salt
Instructions:
- Preheat oven to 375 degrees.
- In a small dish, mix together 3 tbsp monkfruit and 1/4 tsp xantham gum.
- Combine 3 c fresh fruit with the zest of a lemon and juice of 1/2 lemon.
- Toss the fruit with the monkfruit and xantham mixture. Pour into a buttered baking pan.
- Melt 1/4 c butter in a small dish. Mix in 1/4 c Swerve brown sweetener, 1/2 tsp vanilla extract, and 1/4 tsp almond extract.
6. In a separate bowl, combine 1/2 c oats, 1/2 c almond flour, 1/3 c grain free granola (or chopped nuts), 1/2 tsp cinnamon, 1/4 tsp nutmeg, a sprinkle of cardamom, and a small pinch of salt.
- Add the melted butter/sweetener to the oats, and mix until well combined. Sprinkle evenly over the fruit.
- Bake for 30 minutes. Increase oven temperature to 425 degrees and bake an additional 5 minutes until topping is golden brown.
- Top with whipped cream and enjoy!
